Lemon-pepper tuna sandwiches

Ingredients

5 oz water-packed tuna fish, drained

1/2 small carrot, grated

2 Tbsp reduced calorie mayonnaise

2 Tbsp chopped fresh parsley

1 medium minced uncooked shallot(s)

1 tsp lemon zest

1 Tbsp fresh lemon juice

1/2 tsp black pepper

4 slice(s) whole wheat bread

1/2 cup(s) lightly packed arugula

Directions

In small bowl, combine tuna, carrot, mayonnaise, parsley, shallot, lemon zest and juice, and black pepper and toss until mixed. On 2 slices bread, place arugula and top evenly with tuna salad. Cover with remaining bread slices.
